I used the almond potatoes for this receipe since they are easy to work with.
First, boil the potatoes with the skin on, until you can easily put a toothpick through them.
Take them out of the water and let them dry on the side.
In the meantime, mix some olive oil, salt, chili pepper and thyme together in a big bowl
Put the potatoes in the bowl, mix well so that the potatoes are covered with spice.
Have the potatoes on a baking plate and let them bake in a 200C preheated oven for around 20 min, until you see their skins are slightly grilled.
While the potatoes are in the oven, fry some bacon dices together with onion in a pan.
When the potatoes are done, take them out onto a plate. Cut a line on one side of each potato
Gently squeeze the potato from both sides of the cut, so that they open up. In the crack, put in sour cream and top with the fried bacons and onions.
