There is no easier soup to make than this!
Wash and/or peel 4 carrots, cut 1 onion into 4 smaller parts. Boil them all with just enough water to barely cover them for ca. 30min, with the lid on.
With a hand mixer, turn it into a smooth mush. Depending on preference you can add some more water, or boil it with the lid open to reduce the water. Squeeze in the juice of 1 orange. Personally I think a slightly sour orange makes the taste more light and fresh. Add a pinch of cumin powder, a pinch of coriander powder, potentially a pinch a chili pepper powder, and salt to taste.
Decorated with clover flowers, the soup can be served warm or cold, or even with an ice cube as a refreshing drink.
