Baked Chicken with Feta and Chili Apple Butter

Warm up ca. 80g of feta cheese slightly so that it is soft enough to be mashed. Add in 3-4 table spoon of chili apple butter and a good handful of minced fresh rosemary. Mix well to have an even consistency.

Have 2 whole chicken legs ready, make some cuts where the meat is thick to make sure that taste will go into the protein. Rub the feta apple mix all around the legs. Place the legs into an oven form and then use baking baking to cover it. Then bake them in  200C preheated oven for ca. 60min.

In the mean time you can prepare the root vegetable mix with e.g. carrots, potatoes, parsnips… Cut them into similar size chunks and toss them with oil, salt and pepper, potentially also chili powder. Have them on a oven tray with baking paper and then into the oven for the last 30min together with the chicken.

Depending on the size, it could be that either the chicken or the vegetables need more time. You can just leave the chicken inside the oven when the vegetables need to be cooked longer. But you should take out the vegetables if they already look crispy and the chicken requires more time.

Serve together with rich apple butter or fresh apple mash.
